A recent media article, taking a perhaps jaundiced view of the processed food industry, notes that in the case of apple sauce — for instance — fresh apples undergo a truly shocking assault on their nutritional value somewhere between the tree and the grocery shelf.
Apple juice, moreover, results from an even higher level of nutritional degradation — as any remaining fiber is often filtered away to leave little more than a memory of the fruit’s original nutritional value.
Nor is this all that Mother Nature has to endure in the food companies’ handling of her perfect apples: Unhealthy amounts of sugars and other sweeteners are added by the processing of most apple sauces and juices, thus adulterating these products with additives that are often downright hostile to human health. Several commonly added sugars are suspected by scientists of playing roles not only in the obesity epidemic plaguing America, but also in our rising morbidity rates from diabetes and other illnesses.
